Food waste is the sustainability action with the highest individual impact that most people never think about. If global food waste were a country, it would be the third-largest emitter of greenhouse gases on earth, after the USA and China.
The Scale of the Problem — and Why Food Beats Recycling
The average European household throws away approximately 20% of the food it purchases — between 80 and 100kg of food per person per year. This waste represents the entire resource input of that food: the water used to grow it, the land that produced it, the energy used to process and transport it, and the methane produced when it decomposes in landfill. Recycling receives far more behavioural attention than food waste in most households, despite having a fraction of the impact. This is partly because food waste is less visible (the bin fills gradually and the connection to environmental impact is less salient than sorting bottles and cardboard) and partly because industry has invested more in communicating recycling than waste reduction, for obvious commercial reasons.
Where the Waste Actually Happens
Studies of household food waste consistently identify the same categories in the same order: fresh vegetables and fruit (the single largest category — 45–50% of household vegetable purchases are thrown away in many European countries), bread and baked goods, and dairy products. Meat wastes less by weight but significantly more by environmental cost per kilogram. Understanding where the waste occurs is essential because the solutions are different for each category.
- Fresh vegetables and fruit: bought with good intentions, unused because meals aren't planned specifically around them, and discarded when they soften or wilt. Solution: shop with a specific meal plan, store correctly to extend life, know the "wilting vegetables to soup" conversion technique.
- Bread: the second loaf bought before the first is finished; artisan bread bought for weekend use that stiffens by mid-week. Solution: freeze half immediately upon purchase, or buy less more frequently.

Practical Interventions That Work
The weekly meal plan. Planning meals for the week before shopping, and buying specifically for those meals, is the highest-impact single change. It eliminates the class of waste caused by "I bought this but didn't use it because we ended up eating something else." The plan doesn't need to be rigid — a loose plan (Monday pasta, Tuesday chicken, Wednesday leftovers) is sufficient to dramatically reduce impulse or aspirational purchasing that goes unused.
The "use first" shelf. Designate one shelf of the fridge as the "use first" shelf and move everything approaching its limit there. Any meal planning starts from this shelf. This simple spatial organisation ensures nothing is forgotten at the back of the fridge until it is too late.
The freezer as a waste prevention tool. Most food that is about to pass its useful point can be frozen. Bread slices, unused fresh herbs (frozen in olive oil in ice cube trays), over-ripe fruit (for smoothies), meat approaching its best-before date, leftover rice and pasta. The freezer is a pause button, not a cemetery for forgotten food.
Learning the base recipe. Wilting vegetables → soup. Any combination of softening vegetables, simmered with stock, blended or left chunky, produces a good soup. This one skill eliminates the largest category of household food waste. It requires no recipe and no precision; it requires only the habit of looking in the vegetable drawer before going to the shop.
"Best before" and "use by" mean different things and the confusion between them causes significant unnecessary waste. "Use by" is a safety date — food past this date may be genuinely unsafe and should not be consumed. "Best before" is a quality date — food past this date is often perfectly safe but may have declined in quality. Most vegetables, fruit, bread, eggs, and dry goods carry "best before" dates; most meat and ready meals carry "use by" dates. Billions of kilograms of safe food are discarded annually because consumers treat "best before" as equivalent to "use by."
Reducing food waste is the most impactful sustainability action available to most households — higher impact than recycling, higher than switching to renewable energy tariffs, and competitive with dietary changes. A weekly meal plan, a "use first" shelf, a working freezer habit, and one base recipe that uses wilting vegetables: these four changes halve household food waste for the majority of families who implement them.
